Grilled Marinated Albacore

1 cup soy sauce
1 cup sherry
1 medium onion diced
juice of 1 orange
pepper to taste
3 cloves garlic
1 Tbsp. vegetable oil
1/2 cup brown sugar
2 lbs. (4 servings) Albacore loin cuts


Combine all ingredients except fish. Mix well. Add albacore. Chill and marinate 1 hour. Broil or grill basting with marinade.
