Tuna Casserole

2 cups cooked wide egg noodles
1 large can tuna (water packed and drained well)
2 T butter or margarine
1/2 cup celery sliced
1/2 cup carrots sliced
1/2 cup mushroom slices
1/2 cup green onions sliced
1 (10 3/4 oz) can cream of mushroom soup
8 oz sour cream
1 cup milk
Salt and pepper to taste
(optional is 1 tsp cayenne pepper)
Bread crumbs or crushed potato chips


Cook Noodles. Set aside and keep warm.

Saute veggies in butter or margarine. Mix sauteed veggies with rest of ingredients except bread crumbs or potato chips and place in casserole dish. Top with bread crumbs or potato chips. (If you use potato chips watch the salt that you add.) Bake uncovered at 350 for 30 to 40 minutes until bubbling and lightly golden on the top.
