Pacific Rim Honey-Barbecued Fish

Amount Measure Ingredient -- Preparation Method

1/4 cup honey
1/4 cup chopped onion
2 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 cloves garlic -- minced
1 jalapeno -- seeded and minced
1 teaspoon minced fresh ginger
1 pound swordfish steaks, or other firm white fish -- cut in 1-1/4" cubes

Soak four 10" skewers in water.

Combine all ingred. except fish in shallow non-reactive dish or zip-top bag; mix well. Place fish in dish or bag, turning to coat evenly. Cover or seal and refrigerate 1 hr.

Prepare med-hot charcoal fire or preheat gas grill to med-high. Divide fish among skewers. Grill about 10 min per in. of thickness, or until fish turns opaque and flakes easily when tested.
