Snapper: Red Snapper Parmesan by techgoddess

Red Snapper Parmesan

2 (1 lb.) packages frozen red snapper fillets, thawed
1 cup dairy sour cream
1/4 cup grated Parmesan cheese
1 tblsp. lemon juice
1/2 small onion, diced
1 hard-cooked egg, shelled and quartered
1/2 tsp. salt
2-3 drops Tabasco
Paprika


Preheat oven to 350 degrees. Grease a 13x9x2 inch baking dish. Skin fillets and cut into serving-size portions.

Place fillets in a single layer in baking dish. Put remaining ingredients except paprika in blender container. Cover and run on high about 10 seconds. Spoon over fish and sprinkle with paprika. Bake 25-30 minutes or until fish flakes when tested with a fork. Makes 8 serving.
