Shrimp: Shrimp Egg Foo Yung

Shrimp Egg Foo Yung

12 beaten eggs
3 bunches green onions
2 pounds salad shrimp
1 Teaspoon garlic salt
dash pepper


Saute shrimp, onions, garlic salt and pepper just slightly. Allow to cool.

In skillet heat 2 Tablespoons oil. Add shrimp mixture to eggs and mix thoroughly. Fry small omelets until egg mixture is used up. Place in dish to the side.


Gravy:
2 Tablespoons oil
3 heaping Tablespoons sugar
4 heaping tablespoon flour
water (2-4 cups)
soy sauce


Heat oil in skillet. Blend flour and sugar together and add to oil in skillet, whisking briskly. Immediately add 2 cups water. The gravy will start to thicken, but keep stirring with whisk and add enough soy sauce to make gravy a medium brown color, not tan. This is a sweet gravy served with the egg foo yung in restaurants. Plate the rice, then shrimp, then gravy on top.
