Seafood Stuffed Jumbo Shells

1 (16 oz) box jumbo shells -- cooked al dente
4 tablespoons butter or margarine
1 small onion -- minced
4 tablespoons flour
2 cups milk
1 (10 oz) box spinach -- thawed and squeezed dry
2 cups nonfat cottage cheese
2 eggs
8 ounces shredded mozzarella cheese
8 ounces chopped cooked seafood (shrimp, lobster, crabmeat)
Parmesan cheese


Preheat oven to 350° F. and grease a 9x13 inch pan.

Melt butter or margarine and saute onion until translucent. Add flour and cook, stirring, 2 minutes. Slowly add milk, stirring constantly, until sauce thickens. Set sauce aside.

In large bowl, combine spinach, cottage cheese, eggs, mozzarella and seafood. Spread a thin layer of white sauce on bottom of greased 9 x 13 inch pan. Stuff shells with seafood mixture and pour remaining white sauce atop. Sprinkle with Parmesan cheese and bake, uncovered, at 350 for about 45 minutes, or until bubbly.

NOTE: This freezes very well
