Salmon: Samon Waldorf Salad

Salmon Waldorf Salad

1 cup mayonnaise
2 oz. half and half
2 oz. lemon juice
1 Tbl. ginger powder
4 chopped Granny Smith apples
3 stalks chopped celery
1/4 cup raisins
1/2 cup walnuts
1 head Napa cabbage
4 (6 oz.) grilled and chilled salmon fillets
4 strawberries
4 hard boiled eggs
4 lemon wedges
4 sprigs of parsley


Combine mayonnaise, half and half, lemon juice and ginger to make dressing. Blend well and set 1/2 aside. Add apples, celery, raisins and walnuts to a bowl with 1/2 the dressing.

Pull 3 leaves off the cabbage head per serving and set on a plate. Slice the rest of the cabbage into small julienned strips and place a handful on the cabbage leaves. Top with a large spoonful of the dressing/apples mixture. Add a fillet of chilled salmon and the rest of the dressing. Garnish with sliced strawberries, sliced hard boiled eggs, lemon wedges and parsley. Serves 4.
