Salmon: Poached Salmon by syzygy

Poached Salmon

4 med.-size 1 inch-thick salmon steaks
1/3 cup good quality dry white wine
1/3 cup lemon juice
1 1/2 tbsp. dark brown sugar
3 garlic cloves, finely minced (I used garlic press)


Combine lemon juice, white wine, brown sugar and garlic in a skillet. Next, bring mixture to boil and simmer for a few minutes allowing it to cook down a little (reduce by maybe 1/3).

Place salmon steaks, two at a time, into skillet and clamp lid down. Cook for about 4 min. on each side. Repeat process with next two steaks. The brown sugar allows the fish to caramelize beautifully! The combination of the lemon juice and white wine is even more awesome--flavor goes to the bone.
