Red Snapper in Sour Cream Dill Sauce

2 tlbs. fresh dill, chopped fine, plus dill sprigs for garnish
1 tlbs. fresh sorrel, chopped fine
1/4 tsp. lemon thyme, chopped fine
1 tsp. salt, or less, to taste
1/4 tsp. white pepper
1 tlbs. shallots, chopped fine
Butter
1 c. sour cream
4 red snapper fillets


In small mixing bowl, combine dill, sorrel, thyme, salt, white pepper, shallots and sour cream. Pre-heat oven to 400 degrees.

Place red snapper fillets in buttered 9-by-13 inch casserole dish. Spread sour cream-herb mixture on top of fillets and bake uncovered in pre-heated oven until just bubbling, about 35 minutes. Serve immediately, topping each portion with a sprig of dill.

Makes 4 servings
