Oyster Stew

Oyster Stew
(serves four)

1 tbls. butter unsalted
1 cup chicken stock
8 strips cooked crisp hickory smoked bacon chopped
1 tea. shallots chopped
1/8 tea. Tabasco
1 tlbs. fresh chives or green
onions chopped
1 cup fresh corn shucked
2 cups heavy cream
24 large oysters shucked and liquor reserved


In a small saucepan that will hold one quart liquid combine butter, shallots, corn, Tabasco and bacon cook on high heat until corn starts to pop. Add the stock and let reduce by half, turn heat down to medium add cream and chives or green onions, let mixture come to a boil. Let it boil for one minute then add oysters and liquor. Bring back to a boil and the stew is done.
