Stuffed Flounder

Amount Measure Ingredient -- Preparation Method

1/2 pound butter
1 pound fresh crabmeat
1/2 pound shrimp -- peeled and deveined
1 cup chopped onions
1/2 cup chopped parsley
1/2 cup chopped green onion tops
2 teaspoons lemon juice
1/2 teaspoon grated lemon rind
2 cups fine bread crumbs, seasoned with
salt and cayenne
2 eggs
salt and cayenne -- to taste
8 flounders
1/2 cup dry white wine


Melt 1/4 lb. butter; add crab meat and shrimp and cook on med. heat until shrimp are pink, about 10 min. Add onions and cook until onions are transparent; add parsley, green onion tops, 1 tsp. of the lemon juice and lemon rind and cook another 5 min. Remove from heat and add breadcrumbs, eggs, salt and cayenne and mix well.

Make a pocket in each flounder by cutting a slit down the center of the top of each fish; slide the knife along the backbone of the fish on each side of the center to create a pocket with two flaps.

Season fish inside and out with salt and cayenne; fill pockets with crab-shrimp stuffing and place in a large baking pan.

Bake, uncovered, at 375 degrees, basting with a mixture of 1/4 lb. melted butter, 1 tsp. lemon juice and wine, for 20 min.; lower heat to 300 degrees and bake another 15-20 min.
