Fillets in Lemon Dressing
From The American Heart Association Cookbook

4 fillets of firm-textured white fish
2 tablespoons grated onion
1 tablespoon finely chopped celery
4 tablespoons oil
4 slices toast, cubed
1 tablespoon chopped parsley
juice of 1 lemon
grated rind of 1/2 lemon
freshly ground black pepper
dash nutmeg


Preheat oven to 375° F.

Sauté onion and celery in oil. Mix in remaining ingredients.

Place 2 fillets on the bottom of an oiled baking dish. Spread dressing over fish, and top with remaining 2 fillets. Dust with paprika, dot with margarine, and bake at 375° for 20 minutes or until fish flakes easily with a fork.

Yield: 4 servings. Approximate calories per serving: 365.
