Fish: Battered Fish

Battered Fish

2/3 c. flour
1/2 tsp. salt
1 Tbsp. white vinegar
2/3 c. water
1 lb. Cod or Halibut fillets


Cut fish into 2 x 1-1/2 inch pieces. Rinse well. Pat dry with paper towels.

Mix flour and salt together. Mix baking soda and vinegar. Stir vinegar mixture and water into flour mixture; beat until smooth.

Dip fish pieces in additional flour to coat. Dip in batter mixture; allow excess bater to drip back into bowl. Fry 4-5 pieces a time in hot (375^) oil until brown, turning once, about 3 minutes. Drain on paper towls.
