Crab Meat Cheese Melt

4 tbsp. butter
3 tbsp. flour
2 1/2 tbsp. cornstarch
3/4 c. chicken stock (homemade)
3/4 c. milk
2 egg yolks, slightly beaten
3/4 tsp. salt
1 1/4 c. crab meat
1/2 c. grated cheese


Melt butter. Add flour and cornstarch. Stir until well blended. Add stock gradually, stirring constantly. Bring to boiling point and boil 3 minutes. Add milk gradually. Again bring to boiling point and add egg yolks and salt.

Butter ramekin dishes. Put in thin layer of crab meat. Cover with sauce and sprinkle with cheese. Cook in broiling oven until cheese melts and brown. Serves 6.
