Florentine Fish Fillets

4 fish fillets, about 4-6 oz. each (catfish works well)
1 (10 ounce) box frozen chopped spinach, drained & squeezed dry
1 small shallot, minced
1/2 cup mayonnaise
salt & pepper to taste
2 Tbsp dry bread crumbs (seasoned are fine)
4 tsp butter
lemon wedges


Combine spinach, shallot, mayonnaise, seasonings and bread crumbs. Place fillets in microwave-safe dish (or baking dish) that has been coated with cooking spray. Divide spinach mixture among fillets and dot with butter.

Microwave on high about 5 min., or until fish flakes easily with a fork or bake at 375 for about 6-7 minutes. Serve with lemon wedges.
