Wacky Chocolate Cake

Wacky Chocolate Cake - diabetic
1 1/2 cups cake flour
1/4 cup cocoa
2 Tab. granulated sugar replacement
1 tea. baking soda
1/2 tea salt
1 cup water
1 Tab. white vinegar
1/4 cup liquid shortening
1 tea. vanilla extract
1 egg
Combine cake flour, cocoa, sugar replacement, baking soda and salt in sifter. Sift into large bowl, add remaining ingred. and beat to mix. Pour into 9 inch square baking dish. Bake at 375 for 35 to 40 minutes or until done.
Microwave: Cook on Medium for 10 to 11 minutes, turning dish a quarter turn every 5 minutes.
