Raisin Cake

1 cup raisins
Boiling water as necessary
Liquid sugar substitue equal to 3/4 cup
3 large egg whites
1/2 cup oil
1 1/2 teas. vanilla
1 cup unsweetened applesauce
2 cups all-purpose flour
1 teas. baking soda
1 teas. baking powder
1 1/4 teas. cinnamon
1/2 teas. nutmeg
1/2 teas. salt


Preheat oven to 350 degrees F.

Cover raisins with water. Let stand 5 minutes. Drain well and place the raisins in a mixer bowl. Discard the liquid. Add sweetener, egg whites, oil, vanilla, and applesauce to raisins and mix at medium speed for a few seconds to blend. Blend remaining dry ingredients well and add to raisin mixture. Mix at medium speed to blend. Spread evenly in a 9" x 13" pan that has been greased with margarine.

Bake at 350 F for 35-40 minutes, or until well browned and the cake has drawn away from the sides of the pan. Cut 4 x 5 to yield 20 pieces.

Serve 1 piece per servings = 122 calories.
17 gm. carbohydrates; 2 gm. protein; 6 gm. fat.
Low sodium diet: omit salt and use low-sodium baking powder.
