Diabetic Cake #2
1 Cup raisins
1 1/2 Cups water
1/2 Cup shortening
1 egg
1 Cup oatmeal
1 Tablespoon sugar substitute
1 Cup flour
1 Teaspoon baking soda
1/4 Teaspoon salt
1/2 Teaspoon cinnamon
Boil raisins and water. Add other ingredients. Bake in a loaf pan; at 350 degrees about 45 minutes or until done.
