Bread: Banana Bread

Banana Bread - Diabetic

2 cups all purpose flour
2 teaspoons low-sodium baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 cups sliced bananas (3 ripe bananas)
1 egg
1/3 cup Canola Oil
2 tablespoons sugar
1/2 cup unsweetened orange juice
Nonstick cooking spray


Preheat oven to 350 degrees F.

Combine the flour, baking powder, baking soda and cinnamon in a bowl. Stir to blend. Puree the bananas in a blender. Add bananas and remaining ingredients; mix well. Pour into loaf pan sprayed with nonstick cooking spray. Bake 40 to 50 minutes. Cool on wire rack.

Makes 1 loaf

Per 1/2 inch - slice: 1 fat, 1/2 fruit, 1 starch. 141 calories, 2.4 grams fat.
