Blueberry Buckle
1/4 c. oleo
1 c. sugar
1 tsp. vanilla
1 egg, beaten
1 1/3 c. all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/3 c. milk
2 c. blueberries
1/2 tsp. cinnamon
1/4 c. margerine
Cream 1/4 c. oleo, 1/2 c. sugar and vanilla. Add beaten egg. Sift together 1 c. flour, baking powder and salt. Add dry ingredients alternately with milk to the creamed mixture. Pour into greased baking dish, (approximately 10 x 5 x 2).
Cover with berries. Combine remaining sugar, flour, cinnamon and oleo. Blend to form a crumb topping and sprinkle over berries. Bake at 375 degrees about 40 to 50 minutes or until a pick inserted in center comes out clean.
