Cheese: Mascarpone Substitute

Mascarpone Substitute

3 egg yolks
1/2 cup sugar
1/3 cup milk
1 (l5 oz.) container Ricotta cheese
1 cup heavy cream, whipped


Whisk egg yolks, sugar, and milk--simmer 2-3 minutes. Cool, and fold in ricotta cheese.
