Butter: Lemon Balm and Chive Butter

Lemon Balm and Chive Butter

6 Tbsp. unsalted butter -- softened
2 Tbsp. finely minced lemon balm
1 Tbsp. finely minced parsley
1 Tbsp. finely snipped chives
salt to taste


Combine the butter and herbs. Season, cover and chill overnight to ripen the flavors.

Serve with blanched or steamed vegetables, or with poached or grilled fish.

Yields about 1 cup.
