posted by Pat T 06-15-99 6:20 AM

Braciole in Crock-Pot

2-1/2 lb. round steak
1 lb. Italian sausage
1 Tbsp. dried parsley flakes
1/2 tsp. dried oregano
1/4 c. grated Parmesan cheese
2 small cloves garlic, minced
1 large onion, finely chopped
1 tsp. salt

Trim excess fat from steak and cut into 6 to 8 pieces; pound until thin and easy to roll.

In skillet or microwave brown sausage; drain well and combine with parsley, oregano, cheese, garlic, onion and salt; mix well. Spread evenly on steak pieces; roll up, jelly roll fashion and tie (or secure with toothpicks). Stack in crock-pot.

Combine:
1 (16 oz.) can Italian-style tomatoes
1 (6 oz.) can tomato paste
1 tsp. dried oregano

Pour over meat rolls; cover and cook on low for 7 to 10 hours. Serve over spaghetti.
