Pork: Mexican Chili

Mexican Chili

1 to 2 lb. cubed pork
1/4 cup butter
1/4 cup chopped onion
1 stalk celery -- chopped
1 clove garlic -- crushed
1/4 cup plus 2 Tbsp. flour
1 1/2 cup water
1 can chili
1 can chopped chilies (jalapeno chilies)
1 tsp. salt
1/4 tsp. pepper
2 to 3 tsp. cumin


Brown the meat in the butter in a Dutch oven. Add onion, celery and garlic and cook until tender. Add flour and mix thoroughly. Add water, chilies and seasonings. Bring to boil; reduce heat and simmer 30 minutes or longer. If too thin thicken with flour and water mixture. If too thick, add water. Serve over refried beans on flour tortillas.
