Zucchini, Eggplant and Squash Casserole
1 small zucchini
1 small eggplant
1 patty pan squash
1/2 green pepper
1/2 onion
2 or 3 tomatoes, chopped
1/2 c. grated Swiss cheese
1 lb. raw hamburger
Sauce:
1 can tomato paste
1 pkg. dry Spatini sauce
1/3 jar Prego sauce
pinch of salt and pepper
Peel and chop vegetables and mix with raw hamburger and put into a greased casserole.
Mix sauce ingredients together and pour over the vegetable and hamburger mixture. Bake 1 hour at 375 degrees. Sprinkle with Mozzarella cheese 5 minutes before done.
