Amount Measure Ingredient -- Preparation Method

1 pound hamburger
1/2 small onion -- chopped
3/4 cup Pace mild salsa
1/2 package taco seasoning mix
1/4 cup water
1 cup frozen whole kernel corn
1/2 cup sliced ripe olives -- drained
1 small Jiffy corn muffin mix
1 cup cheddar cheese -- shredded


Preheat oven to 350 degrees F.

Cook hamburger and onion until no longer pink; drain fat. Stir in salsa, taco seasoning and water; bring to a boil. Reduce heat to low and simmer until thickened.

Stir in corn and olives. Spoon into 9" square (or 11 x 7 rectangular) baking dish, sprayed lightly with Pam. Prepare corn muffin mix according to package directions. Stir in cheese; spread over meat mixture.

Bake uncovered at 350 for 30 to 35 minutes or until crust is golden brown. Serve with additional salsa if desired.

Serves 3 to 4.
