Bark Festive Winter Crunch Bark

Festive Winter Crunch Bark
(The Pampered Chef, Ltd.,2000)

1/2 Cup flaked coconut, toasted 125 ml.
1 Cup salted cashews, coarsely chopped or a "nut" of your choice 250 ml.
1 1/2 lb. white chocolate wafers 750 gr.
2 Cups crispy rice cereal 500 ml.


Toast coconut in microwave in micro-save dish for 3-4 minutes on med., stirring every minute. Coarsely chop cashews (or other nut) and mix with coconut.

Place chocolate in micro-safe bowl and heat on medium (or lower) for 3-4 minutes, stirring every minute. Take out of microwave when it's almost melted and stir until it's all melted.

Put cereal in a big bowl, and mix with the melted chocolate and half the coconut mixture, until well mixed. Spread on a large greased baking sheet. Sprinkle with remaining coconut mix and press into chocolate. Chill for 1/2 hour. Break bark into pieces.

Store, tightly wrapped in the fridge for a couple of weeks or in the freezer until Christmas.
