Cake: Pineapple Upside-Down

Pineapple Upside-Down Cake

1/4 cup butter
2/3 cup brown sugar
9 pineapple slices (save syrup)
9 marachino cherries

cake:
2 egg yolks
3/4 cup sugar
1/4 cup syrup from pineapple
3/4 cup cake flour
1/8 tsp. salt
1/2 tsp. baking powder
2 stiffly beaten egg whites


Preheat oven to 325 degrees F. Melt the 1/4 cup butter in an 8 inch square pan. Add brown sugar. Over this, arrange pineapple slices and place a marachino cherry in the center of each.

Make cake batter: Beat egg yolks until very thick; gradually add sugar and keep beating. Add juice and mix well; add sifted dry ingredients. Mix until smooth. Fold in egg whites. Pour over pineapple slices.
Bake at 325 for 1 hour or until tests done.
