Cake: Grandma's Apricot Cake

Grandma's Apricot Cake

3 1/3 c flour
2 c sugar
1 1/2 c milk
1 c egg yolks
1 c margarine
2 tsp baking powder

Filling:
3 pkg apricots
3 Tbsp sugar
water (amount not specified)

Frosting:
3 oz pkg cream cheese
2 Tbsp milk
2 c powdered sugar
3 Tbsp cocoa


Cream margarine, then add sugar; beat well. Add egg yolks and mix. Mix together flour and baking powder; add to mixture alternately with milk. Mix and pour batter in 2 jelly roll pans. Bake at 300 degrees for 25 minutes.

Filling:
Cook apricots, sugar and water.

Split each cake layer into 3 parts. Stack by spreading each layer with apricot filling, making 6 layers in all.

Frosting: Beat cream cheese, add milk, powdered sugar and cocoa, beating until smooth; frost outside of cake.
