Cake Applesauce Cake

Applesauce cake
3/4 cup raisins
1/2 cup boiling water
1/2 cup shortening
1 1/2 cup golden brown sugar, firmly packed
1 tsp salt
1/2 tsp cinnamon, cloves and allspice
2 eggs
1 1/2 cup thick applesauce
2 1/2 cup all purpose flour
3/4 cup walnuts (optional)
2 tsp soda

Combine raisins and boiling water, set aside. In mixing bowl, beat shortening, sugar, salt, spices adn eggs until creamy smooth and fluffy. scoop bowl often . Blend in apple sauce then flour and walnuts.

Stir soda into undrained raisins, add to batter and mix well. Pour into greased floured 13 X 9 X 2 inch pan. Bake at 350 for 40 to 45 minutes or until cake test done. Serve plain or frost with cream cheese frosting.
