Beef Cajun Meatloaf

Cajun Meatloaf

2 Tbl. butter
1 large onion, chopped
1/2 cup green pepper, chopped
1 tsp. salt
3/4 tsp. cayenne pepper
1/2 tsp. thyme
1/2 tsp. pepper
1/4 tsp. cumin
1 lb. ground beef
1 egg, beaten
1/2 cup bread crumbs
1/2 cup ketchup
1 tsp. Worcestershire sauce


Preheat oven to 375 degrees F.

Saute the first 8 ingredients together for ten minutes.

Mix together the remaining ingredients.Add sauted veggies; press into a 9" pyrex pie plate. Pour additional ketchup on top to cover meat, spread with knife to make layer on top of meat.

Bake 375 for 40 minutes.
