Bread: Bacon Cheddar Muffins

Bacon Cheddar Muffins
2 cups biscuit/baking mix
2/3 cup milk
1/4 cup vegetable oil
1 egg
1 cup finely shredded mild cheddar cheese
8 bacon strips, cooked and crumbled
Preheat oven to 375 degrees F.
In a bowl, combine biscuit mix, milk, oil and egg just until moistened. Fold in cheese and bacon. Fill greased muffin cups 3/4 full. Bake at 375 for 20 min. or until golden brown. Cool for 10 min ; remove from pan to a wire rack.
YIELD: about 1 dz.
