ABM: Potato Bread

Potato Bread
from "The Bread Machine Cookbook" by Donna Rathmell German

1/2 c. potato water (3/4 c.)
2 1/2 Tbsp. margarine or butter (1/4 c.)
3/4 egg (1)
1/3 c. mashed potatoes (1/2 c.)
1 1/4 Tbsp. sugar (2 Tbsp.)
2/3 tsp. salt (1 tsp.)
2 c. bread flour (3 c.)
1 1/2 tsp. yeast (2 1/2 tsp.)


Measurements are for 1 lb. machine with 1 1/2 lb. in parenthesis.

Start by boiling 1-2 peeled potatoes. Save the water to use in the bread. Then mash the potatoes, without milk or butter, and let cool to lukewarm or room temperature. Add all ingredients into bread machine. Set machine on normal cycle.
