Butter Bean and Sage Pate

Warm Butter Bean and Sage Pate

4 Tbs. olive oil
1/2 small onion, finely chopped
1 clove fresh chopped garlic
1 Tbs. chopped fresh sage
1 tsp. fresh grated lemon peel
1 14 oz. can butter beans, 6 tbs. liquid reserved
1 tsp. lemon juice
Pinch of cayenne pepper
Italian bread, sliced
Extra-virgin oil

Heat oil in a skillet and fry onion, garlic, sage, and lemon peel for 5 minutes until soft but not golden.

Add beans, with about 6 tbs. of their liquid from can, lemon juice and cayenne.

Cover and simmer gently for 5 minutes.

Mash beans with a potato masher to form a rough paste. Season to taste.

Spread on Italian bread and serve immediately, or transfer to a small bowl and serve cold, drizzled with extra oil.
