Texas Caviar Dip
2 cans black eyed peas
1 can hominy or corn
4 green onions cut up
2 garlic cloves minced
1 medium bell pepper, seeded and chopped
1/2 cup onion
1/2 cup parsley chopped
1 (8 oz) bottle commercial Italian salad dressing.
Combine all ingredients except dressing; mix well. Pour dressing over, and marinate for at least 2 hours in fridge. Drain and serve with tortilla chips or serve on top of a green salad.
