posted by Jo 11-09-100 10:14 AM

Henny Penny Pockets

1 pkg. (10 oz) refrigerated biscuits
1/4 cup shredded cheese
1 large egg white, lightly beaten
Filling (a good way to use up leftovers)
Suggested fillings: Chicken, tuna, or ham salad Sloppy Joes (add oregano for pizza taste)
Chili
Mixed veggies with chopped ham

Press or roll each biscuit into a 4" circle on a lightly floured surface. Mix cheese into filling. Spoon 1 rounded Tablespoon of filling on 1 side of the circle. Brush water on the edges of circles. Fold each biscuit over filling, forming a semi-circle. Use a fork to crimp the edges. Brush with egg white.

Place on lightly greased baking sheet. Bake 8-10 minutes or til golden.
