Mock Chopped Liver #1 - pareve

This is a Vegetarian/Parve version of the famous Jewish dish - "Chopped Liver".

Amount Measure  Ingredient -- Preparation Method
-------- ------------ --------------------------------
1       Medium  Eggplant
3       Eggs -- Hard Boiled
Salt
Pepper

Oil -- For Deep-Frying

1. cut the eggplant into 1.5 cm / 1/2" discs.

2. spread salt on the discs and place in a strainer for 1 hour (this will take
the bitterness out of the eggplant)

3. rinse the salt off the eggplant. dry with a paper towel.

4. deep fry the eggplant in oil to light brown.

5. in a food processor chop the eggplant and hard boiled eggs.
add salt and paper to taste.

serve chilled

NOTES: you may add interesting spices to the mix e.g. chili powder, Cumin,
Caraway etc.
