KC: Zucchini "Crab" Cakes - pareve

Some time ago, Sharon Frye posted this recipe on the Eat-l list.
I have made them several times and they are a delicious kosher
alternative to the real thing.  Sharon has generously given her 
permission for me to post the recipe here; she says that one of
the pleasures of finding a really good recipe is to share it with
others.

Zucchini "Crab" Cakes

2 1/2 cups grated zucchini (or yellow summer squash)
1 cup fine bread crumbs
1 beaten egg
2 tablespoons melted margerine
1 tablespoon Old Bay Seasoning
4 tablespoons flour
1 small onion, chopped fine

Mix all ingredients together. Shape into patties. Fry in a mixture of half 
oil/half margarine at about 350 degrees. When golden on one side, turn and 
fry other side. Be sure to turn only once.

Drain on paper towels. Serve hot.  May be reheated in microwave.

Sharon F. notes that this recipe was given to her by Iva Boaz, a custodian 
at the school where she teaches.  She suggests serving it with
seafood sauce.  (I never buy it but my understanding is that it's
served with seafood but does not contain seafood.)
