KC: Lasagne, Marli's Vegetarian - pareve

1 large cooking onion, coarsley chopped
1 carrot, diced
1 medium zuchini, diced
1/2 lb mushrooms, sliced
1 green pepper, diced
2 cloved garlic, chopped
1 750 ml can of Hunt's tomato sauce
1 package of frozen chopped spinach, thawed
15 lasagne noodles, cooked
1 lb grated mozzarela cheese

Saute onion and carrot until soft. Add other vegetables and saute until
tender. Add sauce. Season with pepper and garlic. Simmer 20 minutes.
Layer noodles, sauce, spinach and cheese. Bake at 350 F for 30 minutes.
Let stand 10 minutes and serve.
