Carrots Vinaigrette - pareve

I just don't have a taste for sweet dishes together with savory ones, so
I'm inclined to relegate sweets to dessert. This appeals to me far more,
and I think I will be including it in my Rosh Hashana menu.

Rosalyn F. Manesse offers this recipe via the Jewish Communication Network
website. Her reference to carrots as a symbol of prosperity is based on a
Yiddish pun, as the word for carrots, "mehren," also means ~more~. In
addition, the round disks are thought of as coins.

Carrots Vinaigrette

Carrots are served on New Year as a symbol of prosperity. This recipe is
made ahead of time, and may be considered as a vegetable, salad or side
dish. It may be served on top of lettuce and sliced salad vegetables,
making salad dressing unnecessary. This recipe is also suitable for Passover.

1 pound carrots, peeled and sliced
1/4 cup oil (preferably olive)
2 tablespoons wine or cider vinegar
1 tablespoon chopped chives or green onions (optional) 
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes 
1 clove garlic, minced
1/2 teaspoon paprika
1/2 teaspoon sugar
salt and pepper to taste

Steam carrots until crisp tender. Allow to cool. Whisk or beat together the
remaining ingredients. Combine and chill. Serve cold. 
Serves four to six.
