Carrot Ring - pareve

This one is really good when baked in a ring or bundt pan --
fill the middle of the ring with hot peas or other veggie.
Carrot Ring
4 Cups cooked & mashed carrots
1/3 Cup finely chopped onion
2/3 Cup fine bread crumbs
4 eggs, lightly beaten
1-1/4 tsp salt
1/2 tsp black pepper
Cook carrots and make sure you have four cups after cooking
and mashing. Mix carrots, onion, and crumbs in a bowl. Add eggs,
salt, pepper and mix well. Turn into a WELL greased 5 Cup ring
mold. Bake at 350 for 30-40 mins. (until well set) Cool a few
minutes, then loosen edges and turn onto a plate.
Fill center with a hot veggie.
