Adaptation to Carciofi alla Guida, by Brian Mailman:
My brother showed me a couple years ago a delectable and
unusual way to cook artichokes. It's similar to Carciofi
alla Giudia, but different enough I thought I'd post it
Slice them in half, lengthwise. Remove choke. Slice a few
cloves of garlic.
Pour about 1/4" olive oil in heavy pot and put in sliced
garlic. Turn the heat on low, as low as you can get it. OK,
maybe not that low.
Put in the artichokes and cover pot. Cook for about an hour,
and serve with either clarified lemon-butter or mayonnaise.
Brush the oil, bruschetta-style, on slices of sourdough
French bread and top with pot-roasted sliced garlics.
