Scallions and Citrus Couscous - meat

 6 cups of homemade chicken stock

 3 cups of couscous

 1 1/2 cups of scallions chopped

 1 1/4 tablespoons of orange  

 1 1/4 tablespoons of lemon  

 

 In a large sauce pan bring stock to a boil. Stir in couscous.

 Reduce heat and simmer for 2 minutes. Take off the heat and cover

 for 15 minutes. Uncover the pan add scallions, orange and lemon zest.

 If desired, season with salt and pepper.
