Yemenite Spice Mixture: Hawaiij - pareve

A recent recipe called for hawaiij (pronounced haWAyej), prompting someone
to ask me, privately, what it is. This is the equivalent of Chinese
five-spice powder or Indian garam masala. Just as Hungarians 
confide they have a "special paprika," Israelis of Yemenite 
origin have special family recipes for hawaiij. There is even 
a special version for use in coffee, which I suspect might 
have some ginger in it. 

Yemenite Hawaiij
~~~~~~~~~~~~~~~~
For use in soups, meats and vegetable dishes.

5 Tablespoons ground cumin
2 Tablespoons ground cardamom  
5 teaspoons ground black pepper
3 teaspoons ground turmeric
2 teaspoons ground coriander

Mix together. Store away from light in a tightly covered jar.

Yield: About 1/2 cup
