Schmaltz #2, Miriam's - meat

1. Remove the skin with the fat from a chicken and dice it 
   very finely

2. Chop an onion

Place the skin and onion in a saucepan and cook it over very 
low heat until the skin bits and onion are golden and the 
fat has melted. Strain through a cheese cloth.

Enjoy.
