Relish, Onion - pareve

        Family recipe of Rochelle Pistol 

This recipe is like a chutney, a side dish for the main 
course. 

Ingredients:

4 Pounds Small white onions
2 1/4 Cups Apricot jam
1 3/4 Cups Vinegar
1/2 Tabl Curry powder
1/2 Tabl Turmeric
1 Teas Salt
1/2 Cup  Seedless raisins 
1 Cup Sugar  (See note)


Directions:

Don't wash the onions. Just remove the outer covering and 
wipe with a dry cloth. Cut some of the onions into fine dice
but leave most of the onions whole. 

Put onions in a saucepan. Mix all other ingredients and add 
to saucepan. Cook for about 30 minutes, stirring from time 
to time with wooden spoon. Allow onion mixture to cool.
 
Cover with clean cloth and leave it over night. The next day, 
mix again, and transfer into a container with a lid. Store 
recipe in the refrigerator.

Note: For me is too sweet with 1 cup of sugar. If you like it 
sweeter, you can add sugar, I don't.
