1 medium eggplant
1 small onion, minced
1/2 green pepper, minced
1 small tomato, peeled, chopped
1 tbs oil
1 tbs vinegar or lemon juice
1 1/2 tsp salt
1/4 tsp pepper
Place whole eggplant in baking pan in 350 degrees oven.
Bake until skin is wrinkled and soft
Remove from oven, peel off skin
Add onion, green peper, and tomatoes, chopping until well blended
Beat in oil, vinegar, salt and pepper.
Chill.
Serves 4 to 6
