Papaya Marmalade - pareve

Source: From my mother with love & more.

ingredients:

2  Pound (net)   Papaya, peeled, pitted, and cut in 2-1/2 on 1/2 cm strips.
1     Big        Sour apple -(grand), not peeled, (for the pectin) pitted 
                 and cut in small pieces.
2 Pound          Sugar
Lemon juice from 2 Lemons.

Directions:

In a wide stainless steel saucepan put all the ingredients.
Cover with nylon wrap, and leave it in the fridge  overnight.
The day after, bring on a moderate heat to a boil. Mix from time
to time till sugar is all dissolved.
Continue to boil about 30 - 45 minutes till the fruit is transparent,
and get beautiful dark orange color. 
Transfer to well warm glass jar ( I warm the jars in the oven
on a low heat) up to the top, and cover with nylon wrap and close
air tight. Cool completely. Wash the out side of the jars if needed.
Keep in dark place. 

Note:  The only unpleasant thing about making this marmalade is
the smell of the papaya when its started to boil. But the results
are simply fantastic.
I eat it with plain yogurt. Highly recommended.
