Cucumber Soup, Cold #2: Tarator - dairy

Posted by : Wendy Baker

1-2 cloves garlic
juice of 1 lemon
2 lage cukes or seven small kirbys-unpeeled and unseeded.
1 quart of yogurt
Mint or dill,snipped
few drops of tabasco sauce (optional

In a food processor zap the garlic and lemon juice. add the cucumbers and
zap again. add yogurt and zap just just to mix. add tabasco (if using)
and mint or dill. Serve cold

Note: This soup comes out very similar to a tzatziki, Greek cucumber
sauce. I just mix for the sauce and use a higher proportion of yogurt.
No food processor involved as the yogurt stays thicker if mixed gently by
hand.
