Kugel, Noodle #4: Lokshen Kugel - pareve

    1. 8 oz. broad egg noodles
    2. 1/4 c. margarine
    3. 3 eggs beaten
    4. 1/3 c. sugar
    5. 1 tsp. vanilla
    6. 8 oz. can of crushed pineapple with juice
    7. 1/4 c. raisins
    8. cinnamon
 
    1. Cook noodles according to package.
    2. Drain and rinse with water. This will make get rid of the
       extra starch and make them easier to work with.
    3. Put the margarine in a large bowl and cover with the
       noodles. When melted, mix well.
    4. Add the eggs and mix and then add the rest of the
       ingredients. When adding the pineapple, make sure to add
       the juice as well.
    5. Prepare 8x8 glass baking dish with non-stick spray.
    6. Pour mixture into baking dish.
    7. Sprinkle top with cinnamon and sugar.
    8. Place in pre-heated 350 degree oven for about 45 minutes
       or until top turns brown.
    9. Let stand 5 minutes before serving.
 
  Variations:
 
     * You can substiture any fruit for the pineapple. If you
       want to take out the fruit that is ok too, but add 1/3 c.
       more sugar.
     * Try adding your favorite sweet spice, like nutmeg or
       cloves.
     * To make a savory kugel, take out the sugar and the fruit
       and add 1 tsp. each of salt and pepper. You can add more
       or less to taste. Also experiment with different fresh
       herbs.
